House specialties reward a closer read of the menu. The St. Croix Seafood Pie layers Caribbean lobster, shrimp, and scallops in a lobster-infused sauce baked inside puff pastry. The Southern Twist of a Caribbean Dish puts shrimp, scallops, and fresh blue crab in a cream sauce skillet-baked under a layer of sweet Kentucky cornbread. The Martinique Cobia comes lightly blackened, topped with blue crab and a creamy Martinique sauce. These are dishes built around specific preparations that have been on the menu long enough to develop followings.
