Staring numbly at the seafood counter unable to decide? Start with the right questions. "Where's it from?" (Hint: The correct answer is Florida.) A successful purchase of fresh Florida seafood such as pompano or snapper requires that you ask some important questions. How does the fish look? Eyes clear? Are the gills red? How does it smell? When you touch the fish, does the flesh spring back to its original shape? And what about shellfish? You want them live.
