Just last week, I sat down in the paradise that is Little Palm Island Resort & Spa in the Florida Keys to talk fresh Florida seafood with Executive Chef Luis Pous. It was a good chance for me to try out my new handheld Kodak video recorder while learning about how Executive Chef Pous draws on his Cuban heritage to inspire the incredible fare that awaits guests at this stunning island escape.
