I've never been much of a fishing person, but when I had the chance to head out into the Gulf of Mexico recently, leaving Carrabelle with Captain Kamen Miller of Pressure Drop and Carrabelle Charters, who treated us to a nice ride, baited all our hooks and taught me to both feed the fish (that would be me dropping the hook with bait and giving some nice fish a snack. No fault of our Captain's) and actually catch the fish (I caught two - -how cool was that?). I loved it.
What I really loved from the foodie standpoint was we (and by we, I mean Jim, another writer on the trip) caught two "keepers." Captain Kamen cleaned and filleted the grouper, then we sent it on ahead to Pirates Restaurant (at Pirates Cove Marina), where we were having dinner that evening.
For a small charge, anyone can bring in a fresh catch and the very capable cooks at Pirates will fry it up and serve it with sides (the cost when we were there was $11.95) -- the food doesn't get any fresher than that in my book.
Of course, if you haven't brought your own, Pirates does a great job with any number of dishes including a heaping plate of roasted oysters, the fresh fish in season (often caught by professionals that day anyway) -- it was an enjoyable way to pass the evening as the sun set in Carrabelle.
You know what I say, right? "Eat local, eat Florida seafood." Eat Florida Grouper you catch on a boat out in the Gulf. And for good measure, do all of the above in Carrabelle.
