Cocina 214 Ceviche

When life gives you lemons, make ceviche. Or, in the case of this recipe, when life gives you limes!

A true Floribbean dish, ceviche is a crisp and refreshing cold salad typically made with fish, fruit, and crunchy vegetables such as cucumber or red pepper. 

The fish is marinated and essentially cooked by the citric acid in the dish. There's a variety of ways to mix it up, and Winter Park restaurant Cocina 214 has shared their recipe with us below.

This version features fresh mango, pineapple and jicama to give unique flavor to the dish. Cocina 214 Business Manager and Partner Lambrine Macejewski says they stick to tilapia because it's a fish that most will enjoy, it is available to them year round, and they can keep their ceviche dishes consistent. 

She suggests for someone making this dish at home to try any of their favorite fresh fish (white fish is preferred), but to make sure it is a fish with good consistency in the meat. 

Using fish that is too fragile can become rubbery or even dissolve while marinating. Macejewski says the mango and pineapple add sweet flavors to more traditional ceviche dishes without being overpowering. They complement the citrus flavor from the lime juice and add a refreshing twist perfect for summer.

Here's their recipe:

Cocina 214 Ceviche


Ingredients
1-2 fresh tilapia
1 purple onion
1 avocado
1 jalapeno
3/4 cup grape tomatoes
1/4 cup cilantro
1 mango
1/2 pineapple
1 cup fresh squeezed lime juice
Salt to taste

Directions
- Set aside the avocado and lime juice.
- Dice all remaining ingredients into small cubes and mix together with the lime juice in a large bowl.
- Cover and let marinate in the refrigerator for at least 20 minutes.
- Add the diced avocado and season with salt and pepper. Enjoy!
