Recipe: Roasted Pork Tenderloin from Core Fitness in Tampa Bay

COOKIN’ WITH CORE:  Roasted Pork Tenderloin 

Served with brown rice and sautéed zucchini 

Serves: 4

1LB Pork Tenderloin (serving size 4 oz.) 

Pork seasoning: 1 EVOO and 4 T balsamic vinegar poured & rubbed over pork, ¼ teaspoon garlic powder, S+P pinch (all per 1 pound of tenderloin)

1/2 cup of brown rice per person

2 Cups mixed, sliced zucchini and yellow squash per person 

Place tenderloin on a cookie sheet and spray with olive oil then season then bake in a 350F preheated oven for approximately 20 minutes per pound of pork loin or until done (internal temperature 170F).  Can be light pink in center; to keep moist and juicy, don’t overcook.  

Boil whole grain brown rice per directions.  

Sautée squash in pan sprayed with olive oil spray. Sprinkle with parsley for presentation.
