End Of Summer Luau

Celebrate the end of summer with a Labor Day Luau at Cobalt.  Located on the first floor of the beautiful Vero Beach Hotel and Spa. Located right on the beach, guests will get to enjoy a lavish Hawaiian-inspired feast, tropical cocktails, fire dancers, and live music.

Roasted Pork Loin
garlic, ginger, pineapple salsa

Braised Chicken Thighs
coconut milk, sweet potatoes, plantains

Grilled Local Shrimp
pineapple, mango, scallions

Lomi Lomi Salmon
tomato, red onion, smoked salt

Island Fried Rice
coconut milk, mango, bell pepper, bean sprouts

Tropical Slaw
cabbage, jicama, carrot, ginger aioli

Macadamia Nut Couscous
citrus, craisins, passion fruit

When:  Saturday, August 31 from 6 to 10 pm

Cost:  $25 including the buffet or $10 for general admission, which excludes the buffet dinner.
