I recently got to chat with Chef Andrew and Kelly Ferenc with On The Fly Sandwiches and Stuff Food Truck. Check out their story here, and learn how they got started and what menu items are their customers' favorites.
What inspired you get into the food truck biz?
I have been cooking since I was 15 and I knew that in order to move forward in this business, I would have to own my own restaurant or start a food truck. I had been thinking about a food truck for the past five years or so and I decided that would give me the freedom I wanted to be my own boss and make my own hours as much as possible. With the gaining popularity of food trucks, I knew it was time to pull the trigger and make it happen.
What menu items are your favorite?
It wouldn't make it on my menu if it wasn't my favorite. From the customers' feedback they love our Firecracker Sesame Seared Tuna, Braised Pulled Pork Soft Taco and Marinated Chicken Soft Taco.
Where can people find you?
We have a spot Monday-Friday, 11 a.m.-3 p.m. in downtown Jacksonville near the courthouse (at the corner of Jefferson and Adams Streets.)
