Lucky for us, we don't actually have to travel to France to find such a unique duo as this description perfectly fits the husband and wife team at Bistro de Leon in St. Augustine.
Chef Jean Poinard along with his wife, Valerie, recreate the flavors of France at their family restaurant where they invite guests to relax and experience the 'French way' of dining by slowly savoring each bite instead of hurrying through.
Dining at Bistro de Leon is a privilege as Chef Poinard is a member of the exclusive Les Toques Blanches Lyonnaises, a rare chef fraternity of only 100 members. But don't be intimidated, the menu prices are affordable and you'll be greeted with a warm friendly smile as if entering their home as a guest. Sometimes you might even hear singing coming from the kitchen. If you do, know that the chef is happy!
Chef Poinard shares this about his philosopy on cooking, 'When you cook, you have to love people. My cuisine is like a symphony; I cook to the rhythms of music – and it’s fun. I don’t make my food adapt to me…I get a feeling for the food that’s the freshest I can procure. The menu changes often, serving only homemade breads & pastries, entrees, salads, ice cream and sorbet…everything authentically from home.'
