Moonlight and Moonpies: Beachside Dining in Amelia Island

By: Rachelle Lucas

The month of December brings us many reasons to celebrate, and The Ritz-Carlton Amelia Island has just given us one more: a fun Moonlight and Moonpies-themed dinner to celebrate the full moon.

This fine-dining experience at their award-winning restaurant, Salt, will feature a four-course dinner with coffee-rubbed bison tartare, local Redfish in Sunchoke chowder, and pan-roasted Squab.

Chef Rick Laughlin pays tribute to the full moon with a specially designed dessert, an out-of-this-world moon pie with charred marshmallow sandwiched between a bacon graham cracker dipped in chocolate. Bacon, chocolate and marshmallow? I'd say that's a pretty magical moonpie!

After dinner, take advantage of their spectacular oceanfront location and head down to the beach where an astronomer will be on hand to guide stargazers through the night sky.

“The full moon has long had an aura of mystery, magic and romance,” says General Manager James E. McManemon. “The Ritz-Carlton, Amelia Island’s ideal location along a breathtaking stretch of the Northeast Florida coastline, gives us the opportunity to deepen the experience by creating a dining event around the lunar calendar.”

Here's my Insider tip:  Stay the through the weekend to celebrate New Year's Eve, too! They have a Masquarade Ball planned as well as a New Year's Day Brunch to start 2013 off right.
