I'm looking to take a trip where I can do a variety of outdoor activities such as canoeing, horseback riding, hiking and bike riding with rental equipment. Do you have any suggestions?

I suggest you take a look at White Springs. White Springs is a hot spot for all of these activities. You can set up camp and hike the Florida Trail at Stephen Foster State Park, walk over to American Canoe Adventures to take a trip down the Suwannee River, and drive out to the Spirit of the Suwannee Music Park for horseback riding. For bike rentals, you may need to travel over to nearby High Springs or Lake City. White Springs has some of the best mountain biking in the state, so that's a must-do!
