The flavors of the South come through in this chicken recipe from Lakeside Inn in Mount Dora.

With all the coastline and international flavors in Florida sometimes it’s easy to forget you are in the South. At the dining table of the Lakeside Inn in Mount Dora, it’s hard to remember being anywhere else.

There’s genteel elegance in its Victorian décor, view of the tea garden and hints of the bayou and the Old South in its recipes. Florida casual cuisine is the specialty of the kitchen that has been serving travelers since 1883. Make plans to attend the Sunday Brunch and Afternoon Tea. If you can't visit soon, try your hand at their Southern Pecan Chicken. It became an instant favorite in my home as it’s not only tasty, but easy and quick to prepare.

Southern Pecan Chicken

Serves 4

4, 5-oz. chicken breasts

2, 4 Tsp roasted pecans

Cooking oil or butter

Chopped parsley

Glaze

1¾ cups honey

¼ cup bourbon

Mix sauce ingredients. Heat sauce and set aside. Lightly dust chicken with flour and sauté until golden. Baste chicken with glaze and sprinkle with pecans. Garnish with chopped parsley.
